Recipe: Turkey Lasagna

477 calories, 20g fat, 35.2g carbs, 42.5g protein ... plus 64% Vitamin A, 91% Vitamin C & 278mg of potassium per serving!

I bought a Groupon for Gluten Freely recently and was excited to find that they sell Tinkyada Brown Rice Lasagna Noodles — I have not been able find any lasagna noodles in my local grocery stores, so this was a real treat! The noodles were good, cooked as the package directed, they did not turn out mushy. Here is my recipe for a delish gluten free turkey lasagna:

  • 6 Tinkyada Brown Rice Lasagna Noodles
  • 1 package ground turkey (cooked)
  • 1 cup shredded italian cheese blend
  • 3 cups ricotta cheese
  • 1 cup raw baby spinach
  • 1/2 purple onion (finely diced)
  • 2 medium sized carrots (finely diced)
  • 1 bell pepper (finely diced)
  • 4 cloves pressed garlic
  • Basil (chopped)
  • tomato sauce (I make mine by mixing one can tomato paste, 1 can diced tomatoes & italian seasoning in a heated pan)
  • Salt, pepper & italian seasoning to taste

Mix the cooked turkey, onion, carrots, bell pepper, basil & garlic together. Start with a layer of 3 noodles, top with half of the ricotta cheese, then half of the turkey/veggie mix, followed by half of the spinach, tomato sauce and shredded cheese … repeat once. (I used a long shallow baking dish, so it’s not too thick but made up 6 good sized servings)

Bake at 350 degrees for 40 minutes. Pair with a big salad and some gluten free bread (or in my case buckwheat crackers because they were the closest thing I had to bread) and enjoy!
