I have only recently began to eat quinoa and I have learned that seasoning it correctly is the key to a flavorful side dish. Earlier this week I decided to embark on a new way of preparing this nutritious grain — baked. For this recipe I combined plump, juicy chicken breast with quinoa & red peppers.
Here is how ya’ do it:
- 1lb boneless, skinless chicken breast
- 3/4 cup dry quinoa
- 1 1/4 cup chicken stock
- 1/2 tablespoon dried italian seasonings
- 1 teaspoon dried onions
- 1 red bell paper, cut into thin slices
- 1/2 purple onion, sliced
- 3 cloves garlic, minced
- salt & pepper to taste
Preheat oven to 375 degrees. Rinse quinoa and place in the bottom of baking dish, spreading evenly. Place chicken breast on top of quinoa. Sprinkle with italian seasonings, dried onions and salt & pepper. Top with garlic, onion & peppers. Add chicken stock around pan. Cover with foil and bake for 45-60 minutes (check on dish after 30 minutes, add more chicken stock if quinoa seems dry). Remove from oven, let set 5 minutes before serving … then enjoy!
This dish could be topped with grated parmesan cheese for additional flavor … green beans or a garden salad would make a nice side dish (:
