Recipe: Turkey Burgers


Burgers, pizza, french fries … I LOVE junk food, but I am always looking for a way to make it healthier! Adding more veggies is my go-to strategy for increasing the nutritional content of my favorite junk foods, making them slightly less guilt inducing! Carrots are one of the easiest things to add: dice ’em up, mix ’em in & you’ll never know they are there (perfect for any picky eaters out there)! Here is what ya’ need:

-1lb extra lean ground turkey
-2 medium carrots
-1/2 purple onion
-2 cloves garlic
-1 to 2 teaspoons dried Italian seasoning (or your fav fresh herbs, chopped)
-salt & pepper
-1 tablespoon EVOO
-4 slices of cheese (optional)

In a food processor, dice carrots, onion & garlic. In a large bowl, combine turkey, veggies & spices. Using your hands, shape mixture into 4 patties of medium thickness.

Heat oil in skillet over medium heat. Add patties & cook for approximately 9 minutes per side. Top with cheese just before serving.

This recipes is really versatile. You could also add diced bell peppers & use chili powder and/or cayenne pepper in place of the Italian seasonings. Another plus, you can prepare the patties the night or morning before you are going to cook them (just store in the fridge in an air-tight container) — making it a great quick & healthy dinner for those busy nights when you just do not feel like going all out in the kitchen!

Serve on gluten free bread, topped with lettuce & tomato — a side of broccoli, green beans or corn makes this an even healthier take on an all American classic!
