I have heard that cilantro is one of those things you either love or hate. Personally, I love it! From Vietnamese to Mexican, cilantro makes everything better!
I first had cilantro rice at this amazing South American restaurant (whose name escapes me) while in Disney World a few years ago. Of course, I came home and recreated it for myself. I have blended several recipes together for my own take on this flavorful side dish!
You will need the following for 2 servings:
– 1/2 cup brown rice (you can use white too)
– 1 cup chicken stock
– 1/2 white onion
– 1/2 Serrano pepper
– 1/2 bunch cilantro
– 3 cloves garlic
– 1/2 tablespoon EVOO
– 1 lime
– salt & pepper
Cook rice according to package directions, substituting chicken stock for water.
Using a food processor, chop cilantro, onion, garlic & Serrano pepper.
Heat EVOO over medium heat, add onion & cook until soft. Add cooked rice & cilantro mix. Add a splash of chicken stock if needed. Heat through, salt & pepper to taste. Squeeze lime over rice & mix before serving.
