Sometimes I get the urge to bake … and I’m not much of a baker, but this time, I got it right! I’ve been craving fall for weeks. And since the weather wont cooperate, this dessert was the perfect substitute!
Here’s what you’ll need:
- 1/2 cup brownie mix of your choice (I used Namaste)
- 1 can pumpkin puree
- 1 tablespoon of EVOO (plus a little to grease the pan)
- 1/2 cup water
- 2 eggs
- 1 cup milk or milk substitute
- 2-3 tablespoons honey
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
Preheat oven to 350 degrees. Lightly grease pie pan.
In a medium bowl, mix together brownie mix, EVOO, 1 egg and water. Pour in pie pan and bake for 3-5 minutes, just long enough to firm up the thin layer of brownie batter.
Meanwhile, mix together pumpkin puree, cinnamon, nutmeg & salt. Then add milk, honey & remaining egg. Once thoroughly mixed, add it to your pie pan and bake for 55 minutes.
Allow pie to cool completely before serving. Great on it’s own, with whipped cream or ice cream!
